Sausage Gravy (for Biscuits)

When Alexander was six he loved making (and eating) biscuits and gravy, especially the biscuits which he would make by himself. Samantha liked just the biscuits (soda biscuits!) with jam or plain. This gravy recipe is really simple, it's just a roux with meat.

Ingredients

  • ~10 ounces pork sausage
  • ¼ cup flour
  • 2 ½ cups whole milk
  • Salt and pepper to taste

Directions

  • Cook and crumble pork in a large skillet over medium heat, 6 - 10 minutes
  • Stirring frequently, add flour
  • Gradually add milk (to maintain a high enough temperature, adding too much cold milk too quickly stops the cooking)
  • Bring to simmer, reduce heat, 2 more minutes, stirring constantly (longer = thicker gravy)
  • Season with salt and pepper

Don't Overheat!!

Medium heat means "medium", if your meat is sticking then your heat is too high!
