Glazed Salmon
This is a great way to use frozen salmon fillets, which otherwise don't hold up well to searing or other ways of preparing them. They key to this recipe is to AVOID OVERCOOKING the salmon. When inside temperature reaches 140° (target is 145°) take them out!
Ingredients¶
- ¼ cup brown sugar
- 2 tbsp soy sauce
- 4 - 6 salmon fillets (I've made with 8 even)
- Olive oil
- salt / black pepper
Directions¶
- Heat broiler
- Drizzle olive oil, optionally salt/pepper over salmon in a baking sheet (no pepper if your children don't like "black spots"... looking at you Alexander!)
- Broil 8 minutes, spoon some soy sauce glaze over fish, broil 2 more minutes
!!!! Note It bears repeating: look for 140° rising to 145° at rest!
!!!! Note Since we're broiling it's fine to add onions or other vegetables on the same pan.
